Funfetti Cupcakes

Preheat your oven to 350°F and line a muffin tin with cupcake liners.

In a medium bowl, whisk together 1 1/2 cups all-purpose flour, 1 cup granulated sugar, 1 1/2 tsp baking powder, and 1/2 tsp salt.

Add 1/2 cup softened unsalted butter to the dry ingredients and mix until the mixture resembles coarse crumbs.

Beat in 2 large eggs, one at a time, followed by 2 tsp vanilla extract.

Gradually mix in 1/2 cup whole milk until the batter is smooth.

Fold in 1/2 cup rainbow sprinkles gently to avoid color bleeding.

Divide the batter evenly among the prepared muffin cups, filling each about 2/3 full.

Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.

Let the cupcakes cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
